Oregano is a perennial Mediterranean herb with spade shaped dark green, slightly hairy foliage giving this “super herb” its aromatic, warm and slightly bitter taste. Known as the “pizza herb” of Italian cuisine, oregano combines well with spicy foods adding flavour to roasted, fried or grilled vegetables, meats and fish. Oregano can be utilised fresh, dried or in powder form, adding flavour not only to culinary dishes but also infused in teas and distilled as essential oils.
Sage is an evergreen Mediterranean shrub with delicate silver green leaves, which gives this aromatic herb a strong savoury and slightly peppery flavour. Used in many European cuisines, it teams well with fatty meats such as pork, sausages, goose and lamb, as well as adding intense flavour to stuffing, beans, potato, risotto, cheeses and tomato sauces.
Named for its strong citrus aroma the lemon thyme plant is a very versatile, with an extensive array of uses. When using fresh chop the leaves and add at the very end of the cooking process to poultry, seafood, vegetables, marinades, soups, stews, sauces and stuffing. Alternatively use these beautiful fresh sprigs as an attractive garnish to any meal! Lemon Thyme also be used to infuse teas and syrups as well as adding a surprise savoury element to sweets.
